It’s all in an egg

If you’ve been to France and been unfortunate enough to miss the lunch period you may have popped into a café or boulangerie desperate for food and offered a Croque Monsieur.  The super delicious, hot, grilled sandwich is filled with cheese and ham covered in creamy layers of béchamel sauce.  If your lucky and the chef is still there and willing, you may be offered an egg to go on top…making it a Croque Madame.


This recipe from Bon Appétit shows the perfect way to make béchamel sauce for your Croque monsieur.  To turn it into a ‘madame’ simply pop an egg on top like this recipe from Milk & Honey for a triple decker version of the dish.
